ARMENIAN SWEET SUJUKH

The Armenian name of the delicacy, known in the world as churchkhela, and in most regions of Armenia as sweet sujukh, is sharots.





An Armenian family cooks sharots (sujukh), Western Armenia, the beginning of the twentieth century.

Sweet sujukh is made from walnuts. It is a decoration of any festive table. So, how is it prepared? To begin with, walnuts are peeled and strung on a long thread, then a special thick syrup is prepared from grape or apricot juice and flour, cloves, cinnamon and other spices are added to taste. When the syrup boils, the nuts strung on a thread are dipped into it, and then the resulting delicacy is dried and stored all winter.
